Competition is in the blood for Colorado’s newest Certified Master Chef candidate
Owner/Chef Travis Smith is preparing for the grueling 8-day ACF Master Chef Exam
Bistro Colorado owner/Chef Travis Smith is getting ready to take the nation’s most challenging exam to become one of a small number of American Culinary Federation Certified Master Chefs. Chef Travis is hosting a special media dinner featuring a summer menu of fresh, seasonal and local ingredients in classic recipes, executed with precision and attention to detail.
During dinner service, diners will gain insight on what it takes to succeed in the culinary industry’s toughest test. The 8-day cooking marathon in October puts culinary skills, experience and stamina to the ultimate test. It is so difficult to pass that the failure rate is 80%. Fewer than 70 Certified Master Chefs currently exist in the U.S. If Chef Travis passes the exam, he will join five other CMCs who live and work in Colorado, including Bill Franklin, Ed Janos, David Kellaway, Dieter Kiessling and John Johnstone.
Bistro Colorado is the perfect place to hone the necessary skills. The restaurant features a rotating seasonal menu of local produce, hand-selected meat, fish and game. “Colorado is full of foodies and craft beer and wine connoisseurs who have sophisticated palates,” said Chef Travis. “People care about what they’re going to nourish their bodies with and we designed Bistro Colorado with those diners in mind.”

Before opening Bistro Colorado in 2013, Travis Smith served in the U.S. Army Culinary Arts Team where he competed in national and international events as a military chef, winning 30 gold and silver medals. He was awarded Army Chef of the Year and National Military Chef of the Year, earning the role of Chief of Culinary Skills Training for the Army.
